Start out with a good brisket. Leave a little fat on it, and cook it low and slow. About 160F foil wrap it with some marinade of your choice. Take it past 192F. Cut the flat across the grain to slice. It is helpful to mark the end of the point before cooking with a notch opposite of the grain direction.
