Good info from Steve, just to add a bit. Remember like when cooking pulled pork the key to getting tend bbq is to way over cook it from a "normal" cooking stand point. As Steve said you are looking for an internal temp north of 190, maybe as high as 200. If you have an instant read thermometer of some kind it is a great tool. At first you can look at the numbers but really the best way to use it is just to feel how done the meat it. When the probe slides into the meat with basically no resistance it is done. If there is resistance it probably isn't tender yet.
