Here is a link for you to a technique. Randy was on old friend to this forum and his info is still good. Two changes, you definitely do not need any cure (tenderquick) and you can cook it hotter, I usually smoke salmon at 225 degrees for maybe three hours with applewood. Be sure the brine is very cold, make it and cool it before hand. And rinse the fish well after brining. Let us know what you try and how it works, lots of ways to do it. Mary Ann
