As turkey was the cheapest meat all summer, I cooked it quite a bit. I think it's infinitely better brined. Everything this summer got brined in either a 1 gallon water/ 1/2 cup kosher salt/ 2/3 cup brown sugar base with whatever looked good tossed in (dry rub, grapefruit juice, stout, etc.), or Oak Ridge Game Changer or Mad Hunky poultry brine.
