300 about 3.5 hours. Mine is just under 14 lbs. I don't brine but sometimes inject. I usually don't use BBQ rub at thanksgiving. Just some poultry seasoning and S & P. I'm kind of traditional at thanksgiving. Cook on fe in foil pan to catch drippings for gravy.
