If so, you need to bone it out and remove the big lymph gland that hides deep inside the rear ham. If you don't do this, the results will be nothing short of NASTY!
I butcher my own deer (and my hunting buddies, too) each year and I always bone out each hind quarter completely and save the top sirloin (looks like a small football) as a whole roast and the rest goes to burger or jerkey.
