Dave I can't give pro's & Con's, other than to say in 10 years of cooking comps and at home, in frequenting several BBQ forums, after having taken several BBQ classes, I have not heard anyone or read anything that proposes cooking ribs meat side down. Now there was a gentleman from Texas who use to post here quite often that was a proponent of meat side down, but I have not tried it.
