Dave,i'm gonna guess you talking about in comp.If so or matter of fact either way i see no pro's to meat side down and its all about the apperence,grill marks just dont look good to me.When i wrap em in foil i have put em meat side down but im just not happy with the results,so i cook em meat side up the entire cook,hope this helps
