I don't do the honey or the blue bottle stuff. Just Dizzzy Pig and a bit of apple juice..... Why do you say the heat comes from the top in the WSM... I dont't do water in the pan. I have a large clay "pot" plate wrapped in foil that sits in my foil lined water pan. Doesn't that heat up, then radiate up to the bottom of the meat?
