Shred leftover turkey. In a small pot toast some chili powder until fragrant. Add a tiny bit of stock or water to make a slurry and stir in the shredded turkey. Add enough liquid to coat the meat but not make it soupy. Use the meat to make turkey chimichangas. When rolling add some cheese in with the meat.
I make a gravy from turkey stock (Better than Bullion turkey is okay for this) and chopped scallions. After frying the chimi cover with cheese then smother in onion gravy. Serve with extra cheese and sour cream.
