Made the gravy too. Really nice; got lots of raves, excellent canvas as the chef said. Added (then strained out) a bundle of fresh herbs: parsley & rosemary. Used 3 wings and 2 legs to make it.
Leftover meat from the gravy? The meat was pretty well spent after the 6 hour process, but that meat never made it past the kitchen counter. A little salt, and it was fanststic nibbles for anyone who walked by.
