Juggy, I've added ground meat in with my venison before when I was in a pinch just like you. The end result was just fine.
However, I'm like Butcher Boy in that I don't add any beef to my ground venison. I add around 22%-25% pork (boneless pork butt, fat cap and all) to my lean venison and it works great.
