When I want to get the cooker to 275 for chicken, I cook minus the water. In fact, I find it almost impossible to get the WSM up to 275 with water. Packer Backer Dave wins when he makes mistakes and loses when things go to plan. I find that rather odd, don't you? But then that does sound like the Packers this year.
