Brining will add moisture as well as a light salt flavor. A Typical brine consists of 1/4 cup Kosher salt, 1/4 cup sugar and 1 qt of water. Other items can be added but can influence the final product. Brining for more than 4 hours can also be counter-productive and could turn the product mushy.

After brining, rinse the chicken well and just use kosher salt, fresh cracked black pepper and maybe a bit of garlic. Allow to rest for 30 minutes at room temperature prior to cooking on your smoker or gas grill.
