I am in Michigan. I smoked a catch of salmon today in my little CookShack. I was COLD smoking .
I learned a couple of lessons tonight:
Don't finish cook and leave door open for fish to cool as you head out for the neighborhood bar. Just "one more" = fish/salmon frozen onto the grill racks.
My neighborhood squirrels love my salmon, and the raccoons are worse. I got lucky tonight.
It's surely a sad reflection of my life when "Getting lucky" means no one stole your prize catch.
