The mix ratio I came up with years ago, was something that worked for me. I never would have considered that mixing beef in with the venison would give it a stronger taste. Since I have never tried using straight pork and bacon ends, I don't know any better nor would I notice any difference. All I do know is that my audience likes the end product with the beef in it.
I think I may do some experimenting this year by making different mixtures for different batches. We should have about 60 pounds of venison to grind up with 40 pounds of either pork beef or both to mix in along with the venison. I may do 4 - 25 pound batches with different mixes and then compare them to see what we like best.
