Yo to all, A buddy of mine gave me two large carp filets to cook on the smoker. I have tried this once on my WSM using the Cardog's salmon recipe. I did not like the results as the sweet taste did not compliment the carp. I do like Jim and Jack's recipe for salmon, but not carp.
So does anyone have a good brine recipe that will work?
BTW, I already know the recipe that uses a board.........
