I store my spices in a sealed bag such as a ziplock, with the air squeezed out. I store them in a dark plastic box/container which I keep in a dark, dry, enclosed pantry. I label and date my spices and rotate them at no more than 6 months, at which time I give them away to friends instead of throwing them away. For contests, I make new rubs, using fresh spices, just prior to each contest to ensure I have the freshest, strongest flavors.
