If you have access to a RD their Beef Flap is awesome. 4 flaps to a package and about 16 pounds total package size. Easy to trim, about 10% trim waste, grills great, very tender, cut across the grain. You will LOVE this cut. I like it better than skirt/flank and almost as flavorful as a hanger steak! Med rare and it pulls apart like a 18 hour brisket slice!!
