I've done it by putting a dozen or so whole garlic bulbs (pick out the nice ones) and put on a grate/srceen/tray and smoke hot, 300ish til soft and when you cut the bulbs in 1/2 the cloves should be brown and creamy. Using gloves, squish out the paste into a container, season with a bit of S&P or a bit of rub if you want, and a nice olive oil, maybe double the total volume and into small containers and freeze. Nuke a few seconds when you want some, scoop out what you need and back in the freeze....LOVE IT!
