The way I do it is throw the whole garlic bulb on the smoker with anything else I am cooking (bbq temps)for an hour or two. When they are cool, cut the top off the bulbs, separate the cloves, and squeeze out the garlic. Put in a glass jar and cover with olive oil. This must be stored in the fridge. Mary Ann
