I understand the expressed danger and all, and although we don't do this any longer, for many years (10 or more) we would fill a pint Mason jar with peeled and halved garlic cloves then fill the jar with olive oil and store it on the shelf on the inside of the refrigerator door. It would take us a couple months to use it all, but we never had any ill effects and we're still here to tell about it. Maybe we were lucky and simply had clean garlic. And, the biggest reason we probably don't do it any longer is that we're too lazy to prep it. Good Q'en On Ya'. John
