The cook who has the advantage is the cook who knows that Pitt like the back of his/her hand...
Cooks need to know where the hot spots are, where to place the different cuts of meat, how much fuel is needed to the temps you need to cook at, for the best results...
All Pitts are different, different fuel, different heat flow, different where you place things you are cooking..
practice till you know what your Pitt will do, and what it wont do..
Go with what you know..
