I like this branch of this thread. I think either side is oversimplified. It's not only the cook, nor is it only the cooker. I think ideally one needs to know what's required to make a good meal, and then use a cooker that can offer that. For instance, you may want a good sear on a steak, so when making steaks, use a cooker that can bring some serious heat. If you only have some wimpy electric thing on a given day? Maybe consider something other than steak if you can't jury rig some modification to allow your grill to get really hot.
So it kind of goes both ways. A good cook knows what's needed, and needs to know what his or her equipment can do. And then said good cook decides what to do to create a great meal.
