You might just be right about that. My thinking on the cooking time might well be off base, and I've been thinking about that since I wrote my original post. First off, I'm just trying to get the thing to 118 degrees or so, and since my roast, as you say, is merely longer than, say, a 4 bone roast, the only variable in the cook time is my temp. (225 degrees).
Therefore, 9 hours may be way too much time to factor for. I may only need 4-6 hours to get to 118 degrees.
