Ken -- Option 1: Cut the trimmings up into strips or bite size pieces. Cook in a cast iron pot, skillet or discada with some oil, onions, red and green peppers and a jalapeno or two. Season with cumin and favorite rub or fajita seasoning. Serve on soft tortilla shells with grated cheese and cilantro pesta or your favorite salsa or mexican red sauce.
Option 2: Rub and smoke on grill for about 3 hours; cut into 1-2" cubes; put in pan with mix of favorite sauce and apple juice; cover with foil; back on smoker for a couple hours; uncover and keep smoking until the are "burnt ends" of your liking.
Option 3: Cut into strips or bite size pieces; Cook in large dutch oven on top of stove; here is where your creativness comes in -- make a "red sauce" and then simmer meat and sauce until done; Serve over mashed potatoes, noodles or rice.
