To me it isn't the flavor or "construction" of the sauce, but how well it contributes to the overall impact of the meat. Even a delicious sauce can cause problems if it dominates the flavor profile. A really skilled cook can bring out the best in the meat, rubs, injections, mops, sauces and cooking method to produce something greater than all of them combined. I call this "critical balance" and it takes practice to achieve. Far too many cooks either over-sauce or over-smoke or both.
