Since there was some discussion of cooking times for a whole beef rib roast I thought I would post how my Christmas cook went.
Bought a whole CAB rib roast from Sam's Club. Right around 16 pounds. I coated it with an olive oil, garlic, rosemary and thyme mixture.
Cooked it in the Weber Kettle with a rotisserie with indirect hear. It took right at three hours to reach 122. I probably could have pulled it a bit sooner. It ended up resting for about an hour and half but was still plenty hot.
