Use one of those tenderriser probe things.I did a experement...i cooked thighs with a perfect crisp skin made my turn in box placed thighs in it closed the lid and let em set 20 mins.end result was rubber skin and my thoughts were once they set for 20 mins they heat causes em to sweat which in turn caused rubber skin.i like to get bite through skin for comp.and leave the crisp skin for grillin or home use
