What else will be served in addition to the chicken and ribs? What is the makeup of the crowd that will be eating? All factors in deciding how many bones per person to provide. If it's all men and in a work place setting, 3 ribs per person will only be adequate if you serve them. Otherwise, if you allow them to fill their own plates, regardless of where the ribs are place on the serving line(although I do agree ribs should be at end of the serving line), you will most likely run out of ribs.
On the other hand, if women are part of the crowd, I've never seen a woman take more than three ribs, most only take two, some only take one and some take none(too messy I assume).
Kids are hard to plan for. Little Tommy or Sally may spill their plate 3 times before the ever sit down. Or their momma fills it for them but fills it like they are a field hand and carries it for them, but 90% of it ends up in the trash. What little Tommy really wants is chicken chunks and mac and cheese or a plain weinie. So unless special request are made for children, I generally count them as and adult. Teenage boys can eat like and NFL training table, so need to plan for that as well.
So, with that all being said(i guess you really just wanted to know the time, not how to build a watch), Three bones should be enough. Communicationis the key to a successful event.
