Helpful comments Ol Dan. A quick followup question if I may. After the brisket hits 198 and the fire is at 225 to 250, how often do I need to check the temperature? I realize this will be a ballpark time as each brisket is different. Also, what will the insertion of the probe feel like? Keep it clean Dr. No resistance, equal resistance all the way, or something different? My briskets taste good but fall apart.
