I figure 1.5 lbs of finished product per chicken, using the two pack whole birds from Sam's. I agree with Larry on either spatchcock or beer can. Lately I have been doing spatchcock and once they get good color, I put them in a pan with a little chicken stock, which allows you to cover the pan and speed it up if you are getting short on time. Another cool idea Chez taught me is to chop the skin in little pieces and crisp it in a skillet, mixing the fried skin back in the pulled product, along with a little rub and some juice in the pan.
