Hand chop 2 pounds of chuck into 1/2 inch cubes. Chop an onion about the same size. Smash and chop 2 gloves of garlic.
Brown the chuck in some bacon fat, add the onion and cook until clear, add the garlic and cook a little more. Add a beer, enough beef stock to cover, 1/2 cup chili powder, salt and pepper to taste. Also add some toasted ground cumin (start with a teaspoon). Simmer until the meat is tender. I also add 1-3 tablespoons of my homemade extra hot chili powder about halfway through the simmer but this is optional. Make a slurry of masa flour and water and use to thicken the chili if desired.
