Ray I have cooked a lot of short ribs and they are very good. If you can buy boneless chuck short ribs and treat them like bbq brisket they are very very good. Tender, lot of flavour, a real crowd pleaser. If you braise them again very very good, I have used these in ravioli with good success.
I have also used this boneless cut to cure and make pastrami. (Smoked corn beef). One of my favourite ways to use it is to grind it into burger meat and mix it at a ratio of 75% beef and 25% ground homemade bacon. Add your favourite ingredients and you will have the best burger you ever tried. It is an expensive burger but it will be out of this world
