The cooking time for the pork is about 6 hours @ 300 degrees and then about an hours rest.

The next part, I'd probably do in the indoor oven because, like you said, it's only 15 minutes @ 500. My main problem with the 500 degrees is that it would burn off the seasoning inside my smoker.

I do think the recipe sounds very good. Might give it a try.
