You can't go wrong starting with S&P and some granulated garlic and build off that as you go forward, be generous it's a big hunk of meat. Shoot for 250ish +or- pit temp. Meat temp start checking to see when you can pull/wiggle that blade bone out at 185-190. As soon as that bone can pull out your good to rest it and eat
