You might want to reread what Rick wrote. He said nothing about carving his name. He wrote "scoring" which is a technique to allow fat to render more fully and also to develop a deeper flavor profile by the additional browning that occurs along the edges of the scores.
Oh, and Rick has done it all including judging.
