Wild hogs are much leaner that what we are used to cooking and tend to dry out quickly as said in the previous post. Add as much moisture as possible before cooking by injecting. If you cook it in parts versus cooking it whole, you mat also consider adding additional fat by wrapping in a cheap bacon. Wrapping in foil through the entire cooking process may also help preserve moisture. Just my $0.02.
