If you want chicken to taste like chicken you have to work with a product that is made from chicken. A great stock that has been reduced to 1/2 and bolstered by salt and a few herbs that go with chicken should provide you with a great end product.
And yes I do understand that good chicken stock turns to gell so inject while the stock is still viscus but cool right away
