I have tried a lot of sauces and rubs that I understand a some good cooks use and I am confused. Some of these sauces and rubs have such overpowering flavors that I can't hardly taste the meat. I know that some people use commercial injections that must have a flavor of their own. So what is it? Is good barbecue determined by sauces, rubs, and injections that cover up the taste of the meat?
