Good home bbq and contest bbq are 2 different things. Rick Salmon may jump in here. Myself, as have many others, have gone back to more of a basic, salt, pepper and garlic rub. And for myself I serve sauce on the side. And to me the worst thing you can do is over-smoke your bbq. Tastes sooty and bitter. A soft touch of anything is all you need and build modestly from that. If I do sauce something like ribs, it is a VERY light glaze only, and like I said, serve extra on the side. my 2c
