It'w whatever you want it to be. It's many things to many people. Here in Kansas City there are a boat load of folks that just drown it in sauce. I cooked competetion for 15 years and there it got to be as much sweet as you could get on a hulk of meat. Nowdays I just like to cook it old school....just real wood and some simple spices, salt pepper, garlic salt and maybe some cayenne...to me this taste the best and is in MY opinion what real barbeque is suppose to taste like. I trashed the foil as well, really don't know why people use it so much.
