The BEST barbeque is that unique, very hard to create, combination of all its ingredients (meat, smoke, spice, sauce, etc.) that is somehow greater than the sum of its parts. It is never dominated by any one thing (all too often smoke or sauce) but, instead, is BALANCED and in being what it is, lights up the face of the eater who always says, "Wow, I want some more of that"!
The folks who over-focus on a component like sauce or smoke may wind up creating "good" barbeque, but it takes a dedicated, disciplined artist and a lot of practice to create GREAT barbeque.
This is why I love competitive barbeque so much -- it is all about the pursuit!
