Salt, pepper and a little Weber's Canadian Steak Seasoning. Basted once a half hour before they came out with some Scott's Vinegar Sauce. Exactly 4 hours at 275, no foil and came out perfect. Trimmed 3 racks and cooked the trim pieces too. I think I like the rib trimmings the best ;-)
