Catering Question

I have a friend that does occasional catering, has been asked to do a wedding for 200. Although they have fed upwards of 500, they have not done a BBQ wedding or priced one.

What would be a fair price to charge, allowing a fair profit, for the following menu?

Menu: for 200
Appetizers: ABT's, Cheese platters, Fruit platters, Stuffed mushrooms
Entrees: Chicken, Ribs, Tri Tip
Sides: Cole Slaw, Baked beans, Salad
Drinks: Sweet tea, punch, water, coffee
Dessert: Cobbler w/ice cream

Serving will be buffet style and will be from 2:30 to 10:30 PM.
I'm not completely clear on how they would come to a fair price. I'm sure there's a formula or something. Thank you for any advice or guidence.
