I voted for chicken. Brisket would be second. My chicken usually is in the middle of the pack, and that costs me at comps. I'm looking for that new appearance and new wow factor that will get six judges attention...in a positive score. I've done the nine thighs in a box thing, and that helped the appearance scores, butt the rest of the scores still suffered. Right now I'm working on a very light citrus flavor that has a hint of heat. I'm changing my finishing sauce also, but not to the extent of the Alabama White sauce. I'm doing another cook tomorrow just with chicken...three different styles. Some injected, some brined, and some of both. It will all go into the gumbo I'm making for Tuesday (all four gallons) so it won't go to waste. Will probably be the best gumbo I have ever made and will never be able to reproduce it!
