I talked to two other professional caterers this afternoon, and they both told me what I had already figured out...those appetizers are going to kill that menu and your budget. Those four items costed out at almost as much as the three meats. You don't do four appetizers for a wedding reception buffet. Not unless the Bridal party wants to pay $34 per plate, and if they do, then knock your socks off. ($6800 total)
The price of cheese is more than the ribs...just for example. And then there is your time putting them together so they look like what they should for a wedding. Two weekends ago I did a reception for 150, and the cake they had was $1500.00. I served sliced pork loins, with garlic mashed potatoes, green beans and corn. There was a small amount of crock pot cooked beef that was brought in by someone else...I served it, as long as it lasted. The cake lady made more than I did. The cake was good though. Butt not $10/slice good. It was pretty and very tall, impressive, butt I had guests wanting more of the pork loin than second calls on the cake! Just saying.
