Steve, your chicken comment reminded me of something that's puzzling me a bit. For super bowl, I cooked 3 dozen pieces of chicken wings (separated) in the oven (weather was too bad to grill). The recipe said cook at 400* for 40 minutes. I thought that seemed too long, so I checked them at 30 minutes and was glad I did. I stuck them with my Thermapen and found they were already at 195*-202*. I figured they were "toast." Crispy skin, yes, but very good actually, and not at all over done...and that was after they'd set out on counter for at least an hour to come to room temp before cooking. I know that breasts are never as forgiving and I wouldn't want thighs cooked to those temps either. Regardless, they all disappeared. John
