I practice with times, temperatures, rest periods, rubs, sauces, different injections, marinades, presentations, the works. I look for color differences, juicyness, strength and subtleness of flavors etc. I also try cooking the same piece of meat the same exact way on different cookers to see if there is any differences.
I'm just addicted to BBQ! :)
