I actually took notes on this one. And I was right...best damned gumbo I have ever made...I had one quart out of 4 gallons left over. Had to make another batch of rice to go with it. The new chicken recipes were killer and still had their flavor in the gumbo, even after simmering for two hours. I am very happy with today's chicken cook...and the gumbo. The best part was making some new friends that had never had good gumbo before. They were seriously impressed, to the tune of three more catering gigs this year,plus 2 gigs for St. Patty's Day. Ummmmm...OK, I can do that.
Amazing what happens when you share good food with total strangers. Gave away some gumbo and acquired $5000 in catering gigs. Really? That's all it takes? Missed that class in catering 101. :)
